BE WELL WEDNESDAY:

Hello!  How are you all doing?  I actually have done so much organizing, cleaning and laundry that I'm wondering how I've ever been able to go to work?  Oh yeah, there's always laundry, mess and disorganization.  This is not normal.  Anyhoo, I decided it's a good time to share my immune support Mocktail.  This has great anti-inflammatory ingredients, helps heal your gut and is great for weight loss too. You can make a small version of this or a large, just adjust the water, I like the way it tastes so I make a big one.  It contains:
  • Water
  • 2 tbsp Apple Cider Vinegar (my favorite cure all)
  • Lemon Juice 
  • 1/2 tsp Baking Soda
  • Pinch of cayenne (or a lot if you like the sharpness)
  • 1/2 tsp ginger (you can use powder, if you use fresh you'll need to run it through the juicer)
  • Big sprinkle of turmeric powder
  • Honey or stevia optional (honey is antibacterial, stevia sweetens it up if it's to tart for you)
Drink in the morning preferably before breakfast.  Enjoy and stay healthy! 
Without the temptations I have at work, I have been able to eat super clean, I started running, still can't keep up with my fam, but I'm pretty proud of myself and I have lost 3 lbs on lockdown!

Also wanted to share this amazing recipe for black bean meatballs. This was sooooo good.  Even my husband, who is from the meat centric Mid West, liked them.  This was a recipe video on Instagram from Medical Medium, if you don't follow him, you should, he's amazing!  One of those videos I watch 10x and write down the ingredients, then realize the recipe is in the post.  

My meatballs fell apart so I need to put more oats next time, but they were still so good.  The first picture is a screen shot I took off the instagram video and the second picture is mine.  You may laugh, I'll wait... just another reminder that real life is never as pretty as instagram. 

1 15 oz can of black beans
3/4 cups glue-free oats
1/2 cup diced onion
3 close chopped garlic
2tbsp tomato paste
1/2 tbsp onion powder
1 tsp paprika
1/2 tsp chili powder (optional)
1/2 tsp cumin
1 tsp oregano
Salt to taste

Put it all in the food processor and when blended use your hands to roll into meatballs.
I fried them in a pan with olive oil.  As they cooked I made the sauce, very easy.

1/2 cup diced onion
2 minced garlic gloves
3 cups crushed tomatoes, I used one big can
1/4 cup tomatoes paste
1 tbsp coconut sugar
1 tsp oregano
Basil or parsley for garnish, I had neither, my basil plant died.

Cook all in a pan then add the meatballs and we had this with gluten-free angel hair.

The stores are still out of toilet paper in my neighborhood, but have plenty of fresh produce, go figure.
